Wassail began in the European Middle Ages as a salutation and celebratory toast, from the Old Norse toast ves heill ("be well"), and evolved to mean the drink itself.
Wassail the drink is made from apples, citrus, sugar and spices-such as cinnamon, cloves and nutmeg- as well as beer, wine, liquor or hard cider. It's traditionally drunk around the harvest and Christmastime.
Later, wassail evolved again to include holiday activities, such as caroling.

Old World Wassail was born after more than a decade of sharing the drink with family and friends at gatherings and holidays, and just for myself on cold winter nights. It has become such a staple in our family that once the weather turns cooler, I begin simmering a big pot of wassail. The fragrance fills the house with the warm spices of cinnamon, cloves, apples and citrus. My kids start hopping around the kitchen excitedly, picking out their favorite mugs and waiting for me to pour them a warm cup full. It wasn’t until having my third baby that I decided to try to sell it to others.
So now I’m a stay-at-home mom with a baby beverage business, trying to give others the joy of sharing a hot cup of wassail with their families, making memories, laughing and lingering together a little longer to enjoy the simple life.
